The Awadhi cuisine has been greatly influenced by Mughal cooking techniques and is very popular in North of India as well as in some states in the southern part of the country, such as Kerala and Hyderabad. A cuisine known for its rich and spicy vegetarian and non-vegetarian dishes, Awadhi menu has an array of lip-smacking and healthy desserts as well. Originating from the Nawabi food culture, the ingredients used in preparing the dishes are pretty exotic. ‘Dilwalon ka sheher’ they call Delhi and the way to the heart of these ‘Dilwalon’ is delectable food. Well, of course, there is a reason behind it. Delhi is the birthplace to some of the most scrumptious recipes that are now enjoyed by the whole country, rather the entire world. Considered as the hub of cuisine, Delhi has adopted its variation of food over the centuries and learnt from the royal leaders. The place has a mixed food culture as a result of its history when people from several origins, tradition, and culture from around the globe settled to create a heart-warming civilization with a fine taste for food. The origin of the world-famous Dal Makhni and Butter Chicken was in this city and dates back to 1950s.

A man named Mokha Singh Lamba opened a restaurant named Moti Mahal known for its delightful tandoori dishes in Gora Bazaar, Peshawar. A young chef, Kundan Lal Gujral, of Moti Mahal would mix leftover chicken marinade juice with butter and tomato to stew tandoor-cooked chicken in it. And thus was the birth of an impeccable dish – Butter Chicken!

Tabbouleh

A super refreshing green salad that sits perfectly well with any Mediterranean meal, Tabbouleh is a nutritional and delicious dish. It is made of bulgur, parboiled cracked whole wheat grain and lots of finely chopped fresh parsley. This herb-based salad is smeared with pickled and chopped cucumber and tomato, fresh mint, and green onion to add colour and taste. To further elevate the taste of all the fresh ingredients, Tabbouleh is seasoned with garlic, olive oil, and lemon juice. This healthy green salad can be served with hummus, pita, falafel or anything savoury.

Tzatziki

This authentic Greek recipe has been adopted in several Mediterranean and Middle East countries, simply because the taste of tzatziki blends with all Middle Eastern dishes perfectly. Thus, utilizing our ‘stay at home’, we have brought life to two delicious rice puddings in my kitchen – Dilkhush – Kesar Pista and Dilkhush – Rose. Homemade with love and packed in beautiful jars, Dilkhush is made with best quality ingredients such as rice kheer, Dulce de Leche, and cheena lady fingers. Dry rose petals are added along with rose water to the Dilkhush – Rose Jar, and kesar, pista and other dry nuts to the Dilkhush-Kesar Pista Jar, stirred to perfection.

Lamb
Kibbeh

Considered to be the national dish of many Middle Eastern countries, Kibbeh is made with minced meat and grounded grains. Lamb Kibbeh are croquettes made of tender and spiced ground lamb and cracked wheat, blended with the warm and earthy aroma of Middle Eastern spices and nuts. It is then fried to give it that crispy texture and served with freshly home-baked pita bread, salad and tahini. These delicious bites are more like comfort food for meat lovers and can be enjoyed at any point of the day.

Chicken Shawarma

An authentic Lebanese wrap is stuffed with roasted tender chicken shavings along with veggies, pickles, and a creamy homemade Lebanese sauce to offer your taste buds the most authentic flavour of the Middle Eastern street food. The chicken is prepared by stacking thin slices on a slowly-turning vertical rotisserie, which then gets roasted to the perfect level where the upper layer of the chicken turns luscious and brings out the best aroma of roasted chicken. It is then scraped off and wrapped inside freshly baked laffa and every bite of it is filled with rich flavours.

Shahi
Phirni
